What to try

Daniel’s favourites

From a recent profile in Cafe Reporter, in Daniel’s own words.

Cake

Bee sting

A yeasted cake with cream and a nutty glaze. Daniel's favourite of the cakes — a cake that rewards patience.

Savoury

Plain pie

No sauce to hide behind, no trick of seasoning. Daniel's stated favourite of the pies — what he stakes his morning on.

Bread

Wholegrain loaf

Less forgiving than white — bran cuts the gluten and the crumb closes up if you rush it. One of Daniel's two favourite breads.

“The bun dough is very special; very soft, very moist.” — Daniel, Cafe Reporter, April 2026

Our Story

Where every morning begins with flour

Nestled in the heart of historic Chiltern, our little bakery opens its doors before dawn. The smell of fresh bread, warm butter, and freshly ground coffee drifts down Conness Street every single morning, a quiet signal that something good is on its way. We bake everything by hand, with patience and a love for the craft we’ve practised since 2007. Come in, pull up a chair, and let us feed you well.

Breads & Loaves

Hand-shaped, stone-baked,
honest bread

Every loaf is shaped by hand and baked on a stone deck — caramelised crust, open crumb, and the kind of texture that keeps a slice good through the afternoon. Wholegrain and plain white come out of the oven before the town wakes up. The simplest food, made with complete devotion.

A slow weekend in Chiltern

Winter in the high country: short days, low warm light, and the kind of small town that asks to be walked slowly. A weekend guide to Chiltern for the months when the cafe windows fog and the streets quiet down by five.
